guilty pleasure...

mmmm... This weekend I made a recipe that 2 of my friends each tried and loved- and boy, were they right! It was delicious and so very simple to make. You should give it a try- it couldn't be easier.

Easy Pulled Pork

Into your crockpot, dump the following ingredients (all measurements are approximate)...

2 pounds pork (butt shoulder or ribs, with or without bones- I used ribs because that's what I had)

3/4 cup ketchup
1 cup brown sugar
1 cup root beer (don't use diet)
1/4 cup dried minced onion flakes
1 tablespoon minced garlic
coleslaw (I just shredded cabbage and mixed with coleslaw dressing)
toasted rolls (I used Ciabatta- it held up well)

Let everything cook on low (for about 8 hours) or high (for about 6 hours).
Remove meat from crockpot and shred; put into a separate pan along with about a cup of barbeque sauce (or enough to moisten). Cook over low heat until mixture is completely heated through.

Serve on toasted rolls with coleslaw. Don't forget the napkins!

Totally delicious. Perfectly OK to make the pork ahead and reheat. Can't wait to make these in the summer!

Hey I didn't put the brown sugar in it and it was still good. I think the original lady with the receipe forgot to tell me about the brown sugar?
