creamy chocolate pudding...

Today I'm giving you a recipe that you absolutely HAVE to try if you love chocolate. It's one of those super-easy, pantry-staple, 7th-grade Home Economics-type recipes... you'll make it over and over. I promise.

Creamy Chocolate Pudding

10 Tablespoons Dutch-processed cocoa powder
1/2 cup cornstarch
2 pinches salt
1 cup plus 4 Tablespoons sugar
1 teaspoon instant espresso powder (optional)
4 cups whole or lowfat milk
2 teaspoons vanilla

Sift dry ingredients together into a heavy saucepan. Stir in just enough of the milk to create a smooth paste (don't skip this step!). Gradually stir in the remaining milk. Cook over medium heat and stir slowly and constantly until mixture thickens and starts to boil. Let it boil another 30 seconds or so, continuing to stir. Remove from heat and stir in vanilla. Pour pudding into small dessert dishes (about 8). Lick the spoon. and the pan. It's soooo good!
