morning glorious...

These are not the prettiest muffins I've ever baked, I admit that, but... they are totally delicious! Trust me on this. If you've got some carrots and some apples, you've probably got what it takes to whip them together.

I went to see my design team "sisters" off to CHA yesterday morning and took them a batch of warm muffins for their long car ride down to L.A. Wish I was there with them- they're gonna have a load of fun!

Morning Glorious Muffins
(or as The Husband calls them- 'The Kitchen Sink Muffins')
2 cups flour
1 1/4 cups sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1 1/2 cups grated carrots
1 1/2 cups grated apples
3/4 cup coconut
1/2 cup chopped dates
1/2 cup chopped pecans
3 eggs, beaten
3/4 cup vegetable oil
1/2 teaspoon vanilla
Combine dry ingredients together in a large bowl; in a second bowl, combine remaining ingredients. Gently stir the 'wet' into the 'dry' just till combined. Spoon into muffin cups (either paper-lined or sprayed) and bake at 375 degrees for 18-20 minutes. Makes 24 muffins.

Guess I'll just eat my muffin.

Very thoughtful of you to make these yummy muffins for the girls who left you behind! lol It's too bad my only reason for having a kitchen is that it came with the house!! Otherwise, I just might be tempted to try this recipe. Thanks for sharing. Linda S. in NE

My hubby and I used to get these at a speciality shop in Austin...man, love those things. So many good healthy things in there...I need to whip up a batch myself!
