easy apple crisp...

Here's another no-fail recipe... it's for apple crisp but you can substitute other fruit (pears are yummy). It's from an old book called Just A Matter Of Thyme and I originally bought it just for the darling illustrations!

I not only make this at home but also at Girl Scout camp every summer. We use box ovens- for any of you that know what they are. For those who don't, it's an actual oven made from a cardboard box (produce boxes are a great size) lined inside with aluminum foil. You use charcoal briquets for your heat source and it works just like your oven at home. Really truly. I'm a G.S.- would I lie to you?

Mom's Easy Apple Crisp
6 apples, peeled and sliced
1/2 cup sugar
2 teaspoons lemon juice
1/2 teaspoon cinnamon
1/4 cup water

Mix together and put into an 8" square baking dish.

1/2 cup packed brown sugar
3/4 cup flour
1/4 teaspoon salt
6 tablespoons butter, melted

Mix together and crumble over apples. Bake at 375 degrees for about 40 minutes or until apples are cooked through.
Definetly serve with scoops of vanilla ice cream!

ohmygosh...were we seperated at birth or what...I LOVE Shelly Reeves and her illustrations are amazing and I have everyone of those books because I love the illustrations. I don't think I've ever cooked out of em. LOL. Will have to go back and look this one up though, looks lovely!
