when bad is good...

Does anyone out there love it when their bananas go bad? I do. In fact, I purposely buy waaay too many bananas for one family to eat just so that I can have some spotty, squishy bananas. You know the saying 'when you've got lemons, make lemonade'? Well... when you've got bananas... make banana bread! Everyone seems to have their favorite recipe for it, but just in case you don't- here's the no-fail banana bread that I've made for years. Not sure where I originally got the recipe since I've tried so many, but this one is really easy.

Banana Banana Bread

2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 large eggs, beaten
2 1/3 cups mashed, very ripe bananas
1/2-3/4 cup chopped pecans, optional

Combine flour, soda and salt; in a separate bowl, cream butter and brown sugar. Stir in eggs and mashed bananas until well-blended. Stir in flour mixture, just till moistened. Add pecans, if desired. Pour batter into a greased 9"x5" loaf pan and bake at 350 degrees for 60-65 minutes or till loaf tests done.

Thanks for sharing! Does this mean you will not be making receipe cards for us any more since you are posting them? disapointment....that is something else we have to get going on are the receipe books.
