coconut rum bundt...

The other afternoon I was at a girlfriend's house and we were hanging out with her chickens. I left with an apronful of eggs- aren't they gorgeous? Thanks ladies, I appreciate all your hard work!
I always try to bake something whenever I've got those fresh eggs and this time a coconut rum cake fit the bill nicely.

Coconut Rum Bundt
1 cake mix (yellow or white)
1 small box instant coconut pudding
1 teaspoon coconut extract
1 cup coconut rum
1/3 cup vegetable oil
4 eggs, room temperature
Combine ingredients and pour into a greased & floured bundt pan. Bake at 325 degrees for 50-60 minutes, or until cake tests done.
While warm, drizzle with a glaze made from powdered sugar and more rum. 
Yum.
