chip-a-palooza...

mmm... I love chocolate chip cookies. And there are about as many recipes for them out there as there are chocolate chips!

Here's another one that makes a good "emergency" freezer supply- you just just roll the dough into balls and freeze them so that you can pull out a few at a time and bake whenever you feel the need.
Freezer Chocolate Chip Cookies

1 1/2 cup butter
1 1/4 cups sugar
1 1/4 cups brown sugar
2 eggs
1 tablespoon vanilla
4 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
chocolate chips- you decide the quantity (I use about 2-3 cups)

   Cream the butter, sugars, eggs and vanilla in a stand mixer. Trust me, you NEED the power of a stand mixer. Add the flour, baking soda and salt and mix till combined. Lastly, add the chocolate chips. 
   Wrap the dough up in plastic wrap and refrigerate till firm. Remove from fridge and form dough into balls. You can bake them now or freeze for baking later. I do both!
   Bake at 375 degrees for 8-10 minutes.
